Papa Joe's Ristorante & Pizzeria, located on Newell Street in Pittsfield, operates from recipes passed down through two Italian families—the Colombaris and Ciminis—that merged in the late 1940s. The pizza dough and sauce come directly from Grandma Toffey's original formula, unchanged since her Saturday pizza-baking tradition became a family institution. Italian bread is baked fresh daily using a recipe Toffey learned from her father Felix, a baker from Italy; the same dough forms their sub rolls and hand rolls. The restaurant offers carry-out and delivery throughout Pittsfield and the South Street area of Dalton.
