Pain d'Avignon began as a single artisan boulangerie on Cape Cod in 1992 and has since expanded into a multi-location operation spanning restaurants, cafés, and a dedicated Pizza Lab. The Hyannis location on Hinckley Road operates as a full restaurant and bakery, rooted in Old World breadmaking principles—some loaves take up to 36 hours to produce using only flour, water, and salt, with no preservatives or artificial ingredients. The operation has grown to supply over 250 accounts daily, from grocery stores to Michelin-starred restaurants and stadiums. The Cape Cod Times voted them #1 Brunch on Cape Cod in 2024. Breakfast, lunch, dinner, and brunch are served at the main location, and their artisan breads are also available at Whole Foods, Trader Joe's, and Stop & Shop across the region.
