Cape Cod Cafe on Main Street in Brockton is a direct descendent of the bar pizza tradition that emerged in this city in 1939, when local bars began serving factory workers a distinctive thin-crust pizza. The place was purchased in 1947 by E. James "Papa" Jamoulis, who refined the recipe that defines it today: a ten-inch pan pizza with thin, freshly proofed dough, homemade oregano-based sauce, and a blend of cheddar cheeses, baked in a deck oven. That formula hasn't changed in decades. Beyond the counter, Cape Cod Cafe also ships frozen versions of its bar pizza nationwide.
