Trigo Wood Fired Pizza is a harvest-to-hearth restaurant where local, seasonal ingredients meet the flavor of wood fired cooking. Owner Patrick Griffin and his brother Phil, who owns Apis Verdi Farm in Lebanon Connecticut, opened the restaurant on Main Street in Willimantic in January 2023.
