The restaurant operates a dual coal-fire brick oven heated to 1,000 degrees, where trained pizzaiolos prepare thin-crust New York–style pies to order using Antimo Caputo "00" flour—a slow-milled, finely ground flour that produces the characteristic crispy exterior and slight puff at the edges. Their menu anchors on the Margarita Pizza, Classic Roni, BBQ Chicken, and The Meat Market, all built on the foundation of Francesco's mother's and grandmother's traditional dough recipe.
